We’re closing out nostalgia week with my favorite nostalgic character - Rainbow Brite. She was great, wasn’t she? We created a white chocolate ice cream base, and then threw in some awesome rainbow cookies that our awesome intern Jennifer crafted for us. This one was so good, we just may have to offer it as a flavor of the month soon.I will never not have a day that I won’t want to eat icecream
